I eggplant
2-3 zucchini
1 package sausage of preference (beyond meat, or regular pork sausage, whatever!)
1 cup Spinach
1/3 cup Basil
1 chopped roasted red pepper (optional)
1 26oz jar Marinara sauce
3 cups shredded mozzarella (thanks for the cheese
sticks Remi
2 1/2 cups Panko crumbs (or preferred bread crumb)
1/4 cup Parmesan to mix with panko
2 large eggs
Method:
Preheat oven to 400 degrees. Line two baking sheets
with foil. Coat in healthy nonstick spray oil. -Slice
eggplant and zucchini about 1/2 inch -Soak in warm salt
water for 30mins-1 hour( 1 tablespoon salt for every
cup water)
-scramble eggs w 1tbsp milk
-coat veggies in egg. Let excess drip off.
-coat veggies in mixture of panko and Parmesan -put
on pan and bake on middle rack for about 20 mins or
until golden brown -cook beyond meat sausage or any
meat of your choice as directed. Set aside.
Reduce oven to 350 degrees
LAYER!
Marinara, Zucchini, Cheese, Basil, Meat, Sauce, Spinach, Eggplant, repeat!
Bake for 15-20 minutes on 350 degrees
