- 2 cups quick oats
- 1 ½ cups GF all purpose flour (almond or coconut flour work too)
- 2 large brown bananas mashed (about 1 cup)
- ½ cup light brown sugar
- 1 large egg
- 1 egg yolk
- 1 teaspoon baking soda
- 1½ teaspoon vanilla extract
- ½ teaspoon salt
- 1 ¼ cups semi sweet chocolate chips
METHOD
1. Preheat oven to 350
2. Mix together oats, banana, brown sugar, eggs and vanilla extract until smooth.
3. In a separate bowl, mix together the flour, baking soda and salt.
4. Combine wet and dry ingredients and mix in chocolate chips.
5. Use 1½ – 2 inch cookie scooper and space then 2 inches apart.
6. Bake for about 10-12 minutes or until golden brown.
